ROBUCHON A GALERA, HOTEL LISBOATel +853 2888 3888; www.hotelisboa.com Many new faces have entered the Macau dining scene since this French star opened in 2001, but few can match the skillful artistry of chef de cuisine Francky Semblat. Masterful presentation and prized ingredients such as Kagoshima beef are sure to please. The famous trolleys offered at different stages are laden with bread, dessert, cheese or confectionery. For lunch, the set menu (US$45) is widely considered the best value in town. In the evenings, a pianist provides entertainment. There are two private dining rooms, each seating 15 people. Dining options include tables with a view of the live kitchen, or groups can arrange a long table in the sunken area below. From here, guests will enjoy floor-to-ceiling views over Wynn’s Performance Lake. The open dining area seats up to 50 guests and includes two teppanyaki counters. A glass cyclinder in the room’s centre can display seafood or can even house a DJ. The connecting rooftop terrace, which looks across the Pearl River to Central Macau, fits up to 100 guests. A large courtyard patio can fit up to 60 guests and the intimate indoor area also seats 60. The menu is heavy on rich and full-bodied ingredients. The tasting menu for US$175 per person, includes Filet de boeuf Rossini, served with foie gras and crushed potatoes. Wine lovers will be wowed by the extensive wine list.
